The Grenada Office of Creative Affairs (GOCA), a division of the Ministry of Tourism, Creative Economy and Culture, partnered with T.A. Marryshow Community College (TAMCC) to host this year’s International Cuisine Exhibition, a key feature of the School of Applied Arts & Technology’s Annual Project Exhibition themed “Creative Minds, Powerful Solutions”. The popular culinary event, held on Thursday 16th April at the Tourism and Hospitality Department, delivered an outstanding showcase of culinary creativity and technical skills.
Patrons of the International Cuisine Exhibition were treated to culinary delicacies from globally-inspired menus, such as classic fish and chips, mushroom bonbons and sticky toffee pudding from the British menu, sliders, wings, and apple pie from the American menu, jollof rice and chicken yassa from the West African menu, canoas de plantanos, pholourie, grilled snapper and gizzada from the Caribbean menu, and biryani, burritos and gyros from the Indian, Tex-Mex and Mediterranean menus. There were also several mouthwatering local favourites including oil down, pig foot souse, cocoa tea, coconut bakes, tania log, lambie waters and nutmeg ice cream.
The students’ food art skills were also on display with intricate depictions inspired by the nature, including the Garden of Eden and underwater scenes like the Coral Carnival sculptures at Grenada’s underwater sculpture park. In the preservatives section of the exhibition, the students also showcased their skill and innovation through a variety of candied fruits, jams, marmalades, chutneys, and even soy-marinated eggs.
“The talent and skill displayed at this year’s International Cuisine Exhibition proves that Grenada’s gastronomic future is bright,” noted Tracy Garrett-Baptiste, GOCA’s Operation Manager. “We will continue to facilitate and support opportunities to help our young creatives refine their skills and encourage their entrepreneurial pursuits.”
As GOCA continues to encourage and support youth involvement in the creative economy, this student showcase is one component of a longer-term strategic partnership with TAMCC to develop Gastronomy, identified as a critical pillar of Grenada’s creative economy. This strategic partnership will see the introduction of an associate degree in Gastronomy and an upgrade of TAMCC’s Culinary Arts kitchen, which will provide the students with dynamic, industry-relevant creative education and a modern, state-of-the-art space to learn and grow.
